Names of Corn

There are many food additives that are, or at least, can be, derived from corn. I compiled this information from various sources and my own research. This list is not exhaustive but hopefully has the most commonly corn-derived additives. I wanted a list so here it is:

  • Acids
    • citric acid
    • lactic acid
    • ascorbic acid
  • Sugars
    • dextrose / glucose / glucose syrup, crystalline dextrose
    • fructose, crystalline fructose
    • maltose
    • xylose
    • sucrose
    • golden syrup / treacle
    • confectioner’s sugar
    • caramel
    • invert sugar / invert syrup
  • Sugar Alcohols (Polyols)
    • sorbitol (hydrogenated dextrose)
    • mannitol (hydrogenated fructose)
    • maltitol (hydrogenated maltose)
    • xylitol (hydrogenated xylose)
    • erythritol (fermented glucose)
    • hydrogenated starch hydrolysate
    • inositol
  • Additives
    • anything with the word “starch” (food starch, modified, unmodified)
    • anything with the word “malt” (malt, malt syrup, malt extract)
    • anything with the word “vegetable” (vegetable oil, vegetable broth, vegetable shortening, vegetable protein)
    • dextrin
    • maltodextrin
    • mono-glycerides
    • di-glycerides
    • monosodium glutamate (MSG)
    • lecithin
    • lysine
    • caramel color
    • xanthan gum
    • zein / confectioner’s glaze / vegetable protein
    • hydrolyzed vegetable protein
  • Containing corn
    • vanilla extract, vanilla flavoring
    • baking powder
    • table salt / iodized salt
